Steam Cod With Assorted Vegetables And Lime Vinaigrette

One of the most popular seafood items---Cod. This cod recipe created by the head chef at Bouillon offers you the purest taste of Cod with an Asian twist. If you're looking for something simple in preparation but sophisticated in taste, give this recipe a try.
 

Ingredients                                                                                                           

Serves 2

             Qwehli Cod portion

2              Bamboo Steamers

30            Grams of butternut puree

30            Grams of sundried tomato

10            Grams of shiitake mushroom

5              Grams of black olive

1              Pinch of salt and pepper

 

Preparation                                                                                                            

  1. Boil a pan of water and arrange the bamboo basket on the pan (the diameter of the basket should be larger than the pan).
  2. In your steamer basket, place the cod in the center (you can also add vegetables). Cook for ten minutes.
  3. Serve with butternut purée, sundried tomatoes, 2 or 3 shiitake mushrooms and some black olives.

Chef’s tip: Seasoned with lime oil: mix together lime juice, some lime zests, olive oil, salt and pepper.

 

 

蒸鱈魚配時蔬及青檸醋汁                                                       


做法:

  1. 鑊落油,熱油至160度,加入蒜蓉,百里香,鹽,黑胡椒,香煎智利鱸魚6分鐘後,起鍋裝盤

  2. 鑊落油,加入蒜蓉,洋蔥碎,鹽,黑胡椒,牛肝菌,翻炒;加入黃酒或牛油煮30分鐘後,加入忌廉混合成醬汁

大廚心得:可以加上酸椰菜添加清爽口感

*水煮椰菜1分鐘後,將椰菜放入冰水中冷卻,再放入醋中醃製48小時;雪櫃冷藏!
