Seared Irish Cod with Tomato Pasta
2 Qwehli Irish Cod Portions
1 King Oyster Mushroom
2 Pasta Portions
1 Bottle of Tomato Sauce
1 Tbsp of olive oil
1 Pinch of black pepper and salt
In a large pot, boil some pasta; add salt to flavor. Minus 2 mins from recommended cook time on packages as we will be stir frying the pasta later-on
Cut the king oyster mushroom into strips. Set aside.
Lightly flour both sides of the cod. Place the floured cod into a hot oiled pan; fry 5 mins on each side or until golden brown. Plate once cooked.
Lightly oil the pan again and put in the king oyster mushroom; Stir fry until soft, then pour in the tomato sauce and pasta; Stir fry
Plate pasta with the cod and serve!
