Pan Seared Patagonian Toothfish With Carrot Puree

2 Qwehli Patagonian Toothfish portions
1 Cup of carrot puree
1 Pinch of salt and pepper
Pat dry the toothfish fillets and season with salt and pepper.
Heat a pan to medium high with oil, place toothfish in skin side down and cook for 2-3 minutes until skin turns golden brown.
Flip to the other side and cook for another 3-4 minutes.
Remove the fish from the pan and let it rest for 2-3 minutes.
Spread a spoonful of carrot puree on a plate, place the toothfish on top and place some roasted veggies on side.
