
Pan-Fried Salmon With Spinach And Mango Sauce
Ingredients
Serves 2
2 Qwehli Salmon Portion / 1 Large Salmon Filet
1 Bunch of spinach
1/4 Onion, peeled
1 Tbsp of olive oil
1 Tbsp of butter
1 Pinch of black pepper and salt
2 Cloves of garlic, diced
For Garnish
1 Strand of chive
5 Grams of chopped red onion
2 Olives
For Sauce
1 Mango
1/2 Lemon
1/2 Tsp of olive oil
Preparation

Heat up olive oil in a hot pan. Put in the salmon pave and cook the skin side first for 3-4 minutes, then cover the pan, lower the heat and sear for an additional 6 mins; Turn the fillet over to cook for another 30 seconds. Add salt and pepper.

Meanwhile, fry up the spinach in a pan with garlic, onions and butter for 2 minutes.

Arrange the salmon on a plate and add chive, red onion and some black olives
For Sauce
Mix together mango, lemon juice and olive oil. Put everything in the blender.

鑊落油,香煎三文魚;先煎帶皮一面大火煎3至4分鐘,冚蓋小火煎6分鐘后,再煎另一面30秒;上盤后落鹽,黑胡椒

將葱花,洋葱碎,橄欖塊舖于三文魚上,擺盤

芒果醬
