Creamy Seared Patagonian Toothfish With Spinach

2 Qwehli Patagonian Toothfish portions
1 Bund of spinach
20 Grams of cherry tomatoes
1/2 Cup of milk
15 Grams of butter
5 Grams of minced garlic
1/3 Of onion, diced
1 Pinch of salt and pepper
Pat dry the toothfish fillets and season with salt and pepper.
Heat a pan to medium high with oil, place toothfish in skin side down and cook for 2-3 minutes until skin turns golden brown.
Flip to the other side and cook for another 3-4 minutes.
Remove the fish from the pan and let it rest for 2-3 minutes.
In another pan, fry up the minced garlic and diced onion, add in cherry tomatoes and season with a bit of salt and pepper; add in spinach, milk, and the toothfish, cook for 3 mins
